Mom, What’s For Dinner? Vol. 4

Oh yeah, that menu planning thing again…

Tonight is our monthly dinner with my bestie and it happens to be her birthday as well. The goddess wants Spaghetti Factory so the goddess shall have Spaghetti Factory.  I ain’t complainin’.  Tomorrow, we’re traveling up north a couple hours because momma wants a Christmas Tree with a side of apple pie.  I love Apple Hill and I’ve convinced my people that we need to go there to get a tree.  If you remember, a couple weeks ago, I made French dips then nobody ate them so I popped the meat and au jus In the freezer.  Tonight, I’ll move it down to the fridge then let it simmer in the crockpot all day tomorrow so when we get home, voila, dinner is done.  That brings us into next week’s menu plan.

Sunday – I have a baby shower to go to Sunday afternoon so I’m going to want something to look forward to at home so I’m not filling up on cake.  The first thing that came to mind was enchiladas so I’m going to go with it.  I can fix them up before I take off in the morning and maybe have my love stick them in the oven before I get home.

Monday – Spaghetti squash with brown butter and sage, because the spaghetti squash won’t last in my fridge forever, and I already have all of the ingredients.  Plus any time I can do a Meat Free Monday, I’ll at least try.  Here is the recipe I want to make:

Tuesday – I’m going to do a little flip flopping and move crockpot day to Tuesday so my bonus son can get in on some ribs.

Wednesday – Leftovers.  From Sunday, Monday or Tuesday, or the chili or split pea soup in the freezer.

Thursday – I’ll be in the kitchen making sweet potato casserole for our company holiday potluck so I think I’ll make up some of the French onion chicken for dinner while I’m in there.

Friday – I plan to be stuffed from said potluck and you know I’m not cooking on a Friday.  But I may smuggle some treats home for my family.

Saturday – My girl and I are going to a friend’s holiday party so dinner will consist of appetizers and a glass of wine.  Hmmm…I need to decide which app I want to bring with me though…

 

I’m totally doing it this time.  I’ll have to grocery shop either Saturday evening or Sunday morning, before my massage appointment, then be full speed ahead with this plan.  The more I look at our calendar, the more I’m convinced that grocery delivery is a tool I should be utilizing.  Like I’ve said, menu planning is not the problem, getting the food in the house to execute the plan is my sticking point.  We’re getting about 75% of our food from the CSA but that other 25% is sticking me up.  However, when I did my pre-Thanksgiving shopping, I had a list and a budget and it only took me 45 minutes.  First I’ll try the store with laser focus.  If that doesn’t work, Amazon Prime it is.
